The servilleta or paño is a native cheese of ancestral origin. Currently it still preserves the same artisan process that it had in its origin, molding and pressing it thanks to a cotton cloth.
This process gives it a rounded shape, with the marks of the cloth used as a mold.
It has a smooth rind and a higher pressing level than usual in fresh cheeses, which provides a more intense flavor.
