This exceptional cheese, made from 50% raw goat’s milk and 50% raw sheep’s milk, is our masterpiece. It matures for 12 months with lard coating and it is macerated in extra virgin olive oil. Despite it’s cure, it is surprising for it’s absolute delicacy, which was revealed at the World Cheese Awards where it obtained the 2015-2016 Gold Medal.
